H O L I D A Y   C  U  P A E    C L A S S

   at the Hampton Bays Public Library


In this class, students learned to use disposable pastry bags, couplers, and multiple tips. They learned: to color buttercream, use plunger cutters, make snowflakes and holly leaves, and to make a rosette and swirl for the tops of the cupcakes.

Rosette Cake Class

The Rosette Cake Class, through Riverhead Town, was a huge success, being filled to the max +2!  Students learned to level, fill, and crumb coat a cake. They learned to color icing, make rosettes, and use the "duo" technique (two colors in a bag). They worked with gum paste and petal dust to make butterflies and flowers.

First things first! 

Before we started on the cakes, students created flowers and butterflies from gum paste and let them dry



After they dried, students painted with edible petal dust to add color and shine






 Now for the cake: First, students learned to level, stack, and crumb coat cakes...


Next: Students could add color to their icing, if they chose. Hmm, which color to pick??

This is a nice color!

Starting to make rosettes! 
If you do this at home, make sure your icing is not too soft or the flowers will just drip down the side of the cake! It must be medium to stiff consistency. If it is too runny, add powdered sugar to stiffen. If too stiff, add just a tiny bit of water, a little at a time, until it reaches desired consistency.
